If you have never had a delicata squash before, your missing out. They are firm and sweet and when you roast them they stay firm. I tell my kids they are squash fries.

I just sliced one up, cut out the middle with cookie cutters, added a little kerrygold butter and lots of sea salt .

Roasted in the oven 350 degrees for 15, then bump up to 400 for 8 more minutes.

Flip them at 10 minutes! Sprinkle with you favorite seasoning herbs after you pull them out of the oven. I just tried out my dehydrated tomatoes, rosemary & thyme blend.

You can use spices you like or add hard cheese. This squash will surprise you!! It’s really good!

I just received a heart warming message from one of my you tube subscribers and am so touched. 
For a while I stopped blogging because I had just didn’t believe that there where still people who were willing to work hard to get healing!
I was working with countless moms who had sick children or were sick themselves and they just did not want to change their lifestyles to get well! It makes me sad and angry all at the same time.
Some even mocked and scoffed at me for suggesting they remove processed (fake food) from their diets.
I mean people are appalled to actually cook! That is just way too much work for some.
I figured why Blog? No one is reading it or really cares. But I was wrong. There are growing numbers of people that are fed up with gut damaging medications & or are fighting for their child’s life!
Some people have just hit a wall and are extremely desperate for healing!

This journey not only saved my sons life but I believe it saved mine! If I continued the lifestyle I was living I surely would be very sick! I was one panic attack away from a suicide. 
God pulled me out of that dark place & gave me a natural way to heal my family.
I have personally been able to help over a dozen families turn a loved one from sick or hospitalized to healthy and thriving! 
I’m not trying to brag, I’m just telling you all, I have seen diet and clean living heal all types of disorders from start to finish! I have trouble shot and get it! I do this to make your life better, not harder. Trust me, if you are reading this, you know you need to get it together. 
Don’t wait until things are really, really bad. Sadly, most people wait until they are too sick to live the lifestyle they need to heal. It’s heartbreaking! I know many of these people and have watched them go back to a horrid diet and are now in huge trouble. I’m sorry, I can not do it for you….
My advice, start before your body shuts down and becomes autoimmune!
I have seen many people become allergic to most foods and let me tell you something, it only gets worse the longer you wait!

Oven Roasted Cheesy Bacon Butter squash!

Ingredients
2 acorn or delicata squash , a little over 1 pound each

Sea salt and freshly ground black pepper

1 slice if cooked bacon
1/2 cup of ghee or melted pastured butter (salted kari gold is great!)
1 large clove of bacon
7 basil leaves

1/2 cup hard cheese grated (Sherpa milk machego, asiago, parmasean or Comte cheese.

1 jar of maranara, heated up (whatever your fav or homemade)


Directions
Preheat the oven to 350 degrees F.

Blend 1/2 cup of ghee with bacon, garlic and basil

you can also chop up the ingredients fine & stir it together (slightly less cleanup!)

Split the squash in half through the equator and scrape out the seeds with a spoon. Slice up the squash into 1/2 inch slices, place slices on a parchment lined baking sheets and sprinkle with salt and pepper.

Spoon melted butter mixture and coat the tops of each squash slice.
Bake until tender, 20 minutes.
You may need to rotate your baking sheets after 15 minutes of baking.

Remove your baking sheets from the oven and
Sprinkle cheese on the slices and turn the temp up to 400 degrees and place the baking sheets back in the oven. Cook until melted and slightly crispy.

Sprinkle with sea salt and pepper again.

Serve with hot maranara of choice.
Whole foods organic fat free pasta sauce is acceptable. I reduce it while the squash is cooking.

This dish can be made with refined coconut oil in place of ghee or other cooking fat of choice, it is also great without cheese. Just include the higher temp crisping.

My daughter can’t stop saying mmmm when she eats this! It’s sooo good!

Twist on my classic fluffy cashew muffins!

Chocolate mini muffins

Light fluffy Cashew butter muffins
Yields 11 muffins
Ingredients



1&1/2 cups cashew butter (I use homemade)

2 eggs

1 & 1/3 large very ripe bananas (I always have ripe bananas frozen, no need to defrost)

1/4 cup honey plus 2 tbs
1/4 cup cocoa powder (non alk)

1 & 1/2 tsps. pure vanilla extract

1/2 t. baking soda

1/4 t. sea salt



Instructions
1. Pre-heat oven to 350 degrees F
2. Place 30 liners in muffin tin (if you care small muffin liners)
3. Put all ingredients in the blender (vitamix, blendtec, food processor)
4. Blend until it looks like thick pancake batter.
5. Use a small ice cream scooper 3/4 scoop per mini cup
6. Bake muffins for about* 12-14 min you want a toothpick to come out clean
7. Let cool in pan for about 5-10 minutes
8. Remove from pan and cool on wire rack

Dinner does not have to be complicated…
Pick a protein & lots of veggies, add a sauce or just balsamic & oil! Boom.
You don’t have to have a production or stress out. Lots of veggies is key!
My favorite combo is broccoli, sweet onion, zucchini, garnet yam.
Do whatever you like, just cook enough veggies to get full so you don’t OD on protein!

If you are switching over to this natural, homemade lifestyle, you are probably coming to the realization that everything has to be planned in advance.
From bone broth, to baked goods for the week. Everything takes time and you have to go against what the world is doing. It can be hard at times, other times it can be so gratifying! Go a week eating only what you create with your hands! It’s a great challenge, some will lose weight, others will never leave the kitchen. Organization is key! Making more than you need for today is key! 
Something I have realized is fermenting and slow cooking creates therapeutic MAGIC!! MAGIC I tell you!
Sour kraut juice, bone broth, homemade kombucha, apple cider vinegar tinctures, all of these things create magical healing power in the human body.
Juicing fresh fruits and veggies from the farmers market gives your body up to 500% more nutrition because often the produce is picked a few days prior! Some of the produce at grocery stores sit for months before you eat them! Months! 
Meet your farmers, support them directly, but real food and fresh nuts from the farms. You may have to change your schedule around a little to shop on a Saturday morning, but it’s worth it! It’s a family event for me! I bring a stroller and fill it up!

It’s time to plan for fall, fill your freezers with pastured meats, and bones.  Start some kombucha, kraut juice and pickles.  Can some fresh tomatoes or pears. I love to pick peaches and cut them up and freeze them for smoothies. The more you plan, the easier your life will be. I actually love prep days. Sundays I like to bake some snacks for the week and make a soup. Mondays I like to make chicken salad with with some Whole foods rotisserie chickens. It’s a great snack.  
Rewire your brain in the morning to think about today and tomorrow instead of the next few hours. The love you put in will multiply 💞💘

Ginger tea on the go!

Gird your loins!!! Fall is coming with all of it’s back to school terror! Coughs, sore throats, runny noses, get ready for the season.

Ginger tea is such a pain for some of you, you grate the ginger, steep it, or blend it and strain it.
I came up with an idea today, juice it and freeze it.

3 organic apples (washed & chopped)
1 large hunk of organic ginger (washed and chopped)

Juice it

Stir it well and pour it into ice cube trays and freeze it.

Pop out a cube and toss in into hot water, or throw it into your glass water bottle on the go.
Ginger with a hint of sweet, perfect for when your in a hurry!

I got the ice cube trays on amazon and used a crayons dry erase crayon!

So everyone is always asking me where to buy pastured chickens & feet! Here you go! Go to their website to get in on the action. They have a $1.50 a pound chicken feet special! I was paying over $3 a pound from kookoolan! Reserve them quick for the next harvest. I now have a full freezer of feet thanks to Rachelle!

9 Steps to Perfect Health - #5: Heal Your Gut

I really like this article because it gives basic info about your gut and why sugar, starch, grains and bad oils destroy it.
The only thing I disagree with with consuming large amounts of yam (this always depends on the person), & on his evolution theories).
I continued to read his other articles and thought they were filled with great basic health knowledge that people that read my blog should know.
I personally don’t recommend the plan diet for everyone because of the flax seed cereal. Almost no inflamed person can handle that, especially on a daily basis!

CHILI SOUP—A KID FAVORITE!
CHILI SOUP
A FEW TBS OF FAT FOR FRYING (I use refined coconut oil or ghee)
2 POUNDS GRASS FED BEEF
1 LARGE ONION chopped
3 LARGE CHOPPED CARROTS
3 LARGE chopped CELERY STALKS
A LARGE BUNCH FRESH OREGANO
3 CLOVES GARLIC MINCED (PRESSED)
(1 ) 6 OZ CAN Organic TOMATO PASTE (I use natural value brand BPA free from Azure Standard)
1/3 CUPCHILI POWDER
2 TSPS ONION POWDER
1 TSP SEA SALT
1 TSP PEPPER 
1 1/2 TSP CUMIN
2 TSP COCONUT SUGAR
6 QUARTS BEEF or chicken BONE BROTH
A DASH OF CAYENNE PEPPER TO TASTE
 1/4 cup cheddar optional for garnish
 Directions 
Heat the fat in a large pot over medium heat. Stir in onions, celery, carrots, onion and cook until tender. Toss your cooked veggies in a bowl and pout aside. Add more fat to the pan and brown your ground beef on med heat. Add your veggies back, all spices, tomato paste, sugar and bone broth. Reduce heat to low, and continue cooking on very low simmer for 60 minutes -3 hours.

salt and pepper to taste
Garnish with some shredded sharp cheddar.
